A Summer in Italy

Explore great food and an unforgettable experience.


Approaching soon in the summer of 2017, there will be a trip of a lifetime. The photography class will be heading to Florence, Italy. Florence, Italy will be the starting point but then the group will make their way to different parts of Italy. Sure there will there be great food. I am sure many students look forward to going to Italy and trying their finest wines, pizzas, pastas, and other wonderful Italian cuisines, but this will also be a trip of a lifetime. A true learning and growing experience for each and every person that goes on this trip. I know many student worry that the money is not available, but IUSB can help you to make this happen!

Not only will students be able to get the experience of a lifetime, students will also be able to remember the trip by capturing Italy's beautiful scenery. Susan Moore, a photography professor that teaches many different levels and courses will be the trip leader. After hearing her speak at a lecture, she ensured the entire audience of what a magical experience this is. Let me explain how a typical day would start out. The small group would wake up, grab coffee, and set out to explore Italy. A camera is always needed on you so you can capture what you feel is unique and beautiful. It is a busy day or traveling all over Italy, so you definitely get your workout! But, it is a great way to see Italy and get to know other students from your school.This is a great way for students to have an experience of a lifetime and also earn college credit that counts towards your degree. This is a chance for college students to live with a host family and learn about their host family's culture. This will provide the students with a learning and growing experience to see the world from a different view.

I hope each and every one of you will take to time and opportunity to experience this chance of a lifetime.

Why whine Wednesday? I whine because we are only half way through the week. I suppose that is better than Monday or Tuesday, but really it's only Wednesday. This means we have two more days to go until the weekend.
 
 
The middle of the week, or as we call it "Hump Day" has approached. This day means it's time to start planning the weekend events or delicious meal ideas. Everyone deserves a glass of wine for Wednesday. After working at the Gateway Cellar Winery I have learned how to pair wines with meals.

I used to think people just liked having an extra excuse to drink, but it is true! Wine paired with food makes the food and wine so much better.

One of my families favorite dishes is homemade Alfredo Sauce paired with spinach noodles, sautéed chicken breasts, mushrooms, and snow peas. For this dish I have learned to pair a lighter wine with a lighter color to help bring out all of the flavors. I would advise pairing this dish with a Riesling or a Pinot Grigio. The dryer white wine brings a blast of creamy and garlicky flavor from the Alfredo Sauce. In contrast this also makes the wine stand out and there can be a hint of a butterscotch taste. I know this sounds odd, but it is wonderful.

Here is my exact recipe for the Alfredo Sauce, you can add any veggies or different type of meat if you want. The sauce is very simple to make and it can be made in one pan. The first step is to melt an entire stick of butter. Second, add one bar 8oz of cream cheese. Continue whisking with a fork. Add 3 teaspoons of minced garlic or garlic powder and 1 teaspoon of crushed black pepper. Once everything becomes smooth, stir in two cups of milk slowly. Finally, add 5oz of shredded parmesan cheese. Whisk until smooth and serve!

Life moves quickly. Sometimes so quickly, we don't know the time or even the correct day. We have evolved into a world that stands for constantly being on the go. Time is not always on our side. Have you ever heard someone say, "I wish there were more than 24 hours in a day?" I am guilty, myself, of saying those words.
 
 
This picture symbolizes to me, that we are racing through life. Not always do we take time and appreciate the beauty the world offers. This could include sceneries, traveling, spending time with family and friends, and enjoying scrumptious food. Can any of you actually remember the taste of that specific food you ate? Or were you in such a hurry to eat so you could move on to your next project?
 

It is time for us to stop racing ahead and live in the moment. Take time to sit down and actually taste a meal.

 For me, meal time allows me to spend quality time with my husband and daughter. This is part of the day where we do not worry about time and rushing off to go do things. This is where I let time stop.

Ever since I have developed a passion for cooking, my family has jumped on the bandwagon with me and actually like helping me in the kitchen. A very fun a simple recipe that can never go wrong is my famous crock pot macaroni and cheese. Kids and adults love this comfort food, and it goes along with any type of season. It is that good!

My daughter loves dumping in all of the ingredients and stirring everything around. First you must cook a full box of macaroni. After the macaroni is boiled, strain all of the water out. Dump the macaroni  into a large crockpot. Add 3 TBS of butter and 2 TBS of vegetable oil. Next add in minced onion, garlic powder, salt, and pepper, I normally just eyeball everything. Stir everything together. Then, add in one can of evaporated milk and 1 1/2 Cups of milk into the pot. Stir everything around again. Finally, add some cut up cheese. You will need one package of Extra Sharp Cheddar Cheese, and then one medium block of Velveeta Cheese diced. Set the crock pot on low. Continue to check on it for the next couple of hours. After that you will be ready to eat!

About My Blog

"Delicious Cooking" will contain delicious recipes for any occasion. I am a wife, a mother to a toddler, a full time student, and work part time at the local Winery in Goshen. Time is not always on my side and I know many other college students or professors face the same dilemma.

Through the stress of being in school and trying to find time to create a healthy, delicious, simple, quick, affordable, and yummy meals for my family was not always easy in the past. I would begin looking at different magazines or TV shows to find something to cook for my family. Some of the stuff I did find on there was wonderful. On the other hand, much of it was time consuming also, and I don't always have hours to cook a meal.

Cooking can be intimidating when there are so many different steps and ingredients. Cooking is supposed to be fun and creative!

So, I am here to share with you some of my family and friend's favorite dishes, appetizers, and desserts. I am hoping each and every one of you will at least try something to make, I promise you will not be disappointed! Also, I hope you can see the fun and creativeness cooking has to offer.
